The combination of pepperoni, cheese, and Italian seasonings make this quick and easy bread hard to pass up!

One of the best things you can do in the food prep department as a gluten free or allergy family (or really any family) is to make yummy, homemade, and allergy-friendly staples in bulk so you can freeze them in single size servings. Trust me, this makes grabbing something safe for lunch, snack, or whatever so easy. Just pop it in the microwave until just defrosted/warm, and you’ve got something to grab and go. This is a quick bread recipe that allows you to do just that.

This is a quick bread recipe that allows you to do just that. This quick bread requires no yeast, which means it can go straight from mixing bowl to the oven — no need to allow time to rise! This recipe is also so easy that my 11-year-old daughter loves to bake it herself.

This recipe is also allergy friendly for the top 10+ allergens, making it an easy choice around here. Families with Celiac Disease can understand how difficult it can be to find safe pizza and this quick bread is such a great substitute that will satisfy that craving. In fact, our peanut-allergy kiddo doesn’t even like pepperoni, so we make this bread for the others in the house that do and hope one day he will be brave enough to try it too already knowing all the ingredients are safe for him.

After baking these, we slice the loaves and bag individually to make it easy to grab one out of the freezer for a snack, side dish, or some times even the main dish with a side of warm marinara sauce for dipping!

Individually bag up any left over slices and freeze them for a quick and easy snack or meal!

The Deets

Okay, so some notes on a few of the chosen ingredients:

  • Applesauce: We use applesauce ALOT in baking as a substitute for eggs. It’s a super easy and convenient way to transform many baked goods into vegan options for those with egg allergies. We actually just keep those handy 3.2 oz applesauce snack packets in the pantry at all times and each packet equals roughly one egg.
  • Pepperoni: Our favorite to use is this.
  • King Arthur Gluten Free Measure for Measure Flour: I’ve only tried this recipe using this particular brand of flour (which we also use for almost everything else requiring gluten free flour in our kitchen as well). Gluten free flours can vary so much in their unique formulations, so you may need to experiment if using a different brand.
  • Vegan Cheese: Being sensitive to dairy, I use alot of vegan cheese, but we don’t have any dairy allergies in our home, so if I am not planning to eat this, we just make it with regular shredded cheese and I am told it is amazing!

Ingredients

  • cup applesauce
  • 1 ½ cup milk of choice
  • 2 Tbsp sugar
  • 3 Tbsp extra virgin olive oil
  • 6 oz chopped pepperoni
  • 3 cups King Arthur Gluten Free Measure for Measure Flour
  • ¾ tsp salt
  • pepper (to taste)
  • 1 Tbsp + 1 tsp baking powder
  • 2 cups shredded vegan cheese (or regular cheese, if not sensitive or allergic)
  • 2 tsp Italian seasoning

Garlic Spread for Top of Loaf

  • 2 Tbsp olive oil
  • ¼ tsp garlic powder

Instructions

  • Preheat oven to 350°F.
  • Line a loaf pan with parchment paper. If using a silicone loaf pan, parchment paper is not necessary.
  • In a large mixing bowl, mix applesauce, milk, sugar, oil, and pepperoni until well combined.
  • In medium-sized bowl, combine flour, salt, pepper, Italian seasoning, baking powder, and cheese and mix until well combined.
  • Add flour mixture about 1/3 at a time to wet mixture and mix until stiff dough is formed.
  • Transfer dough to loaf pan and bake for 50 minutes or until a toothpick inserted in center comes out clean.
  • Brush top of loaf with olive oil and garlic mixture and continue baking for an additional 10 minutes.
  • Allow loaf to cool about 10 minutes before removing loaf and placing on wire cooling rack.
  • Serve with warm marinara sauce for dipping or a salad and enjoy!
