Gluten Free Pepperoni Pizza Quick Bread

shredded vegan cheese
(or regular cheese, if not sensitive or allergic)

Garlic Spread for Top of Loaf

Instructions
Preheat oven to 350°F.
Line a
loaf pan
with parchment paper. If using a silicone loaf pan, parchment paper is not necessary.
In a
large mixing bowl
, mix applesauce, milk, sugar, oil, and pepperoni until well combined.
In
medium-sized bowl
, combine flour, salt, pepper, Italian seasoning, baking powder, and cheese and mix until well combined.
Add flour mixture about 1/3 at a time to wet mixture and mix until stiff dough is formed.
Transfer dough to loaf pan and bake for 50 minutes or until a toothpick inserted in center comes out clean.
Brush top of loaf with olive oil and garlic mixture and continue baking for an additional 10 minutes.
Allow loaf to cool about 10 minutes before removing loaf and placing on
wire cooling rack
.
Serve with warm marinara sauce for dipping or a salad and enjoy!
