Today, I want to talk about one of my all-time favorite treats that always makes my taste buds dance with joy: Vegan Gluten Free Cinnamon Rolls! These delightful swirls of dough are allergy friendly, generously filled with sweet cinnamon goodness and topped with a luscious glaze, are truly a comfort food that brings warmth and happiness to any occasion.

A Christmas Wish

We crafted this allergy-friendly recipe (which also happens to be vegan) on Christmas Eve when my daughter eagerly asked to make cinnamon rolls with myself and my mom (her grandma). I sort of groaned at the idea at first not wanting to make something requiring dough to be rolled out and flour all over the counter when we were already clearing away wrapping paper and opened gifts before more company arrived and Christmas dinner cooking commenced!

But, trying to stay in the Christmas spirit of creating family memories and traditions together, I smiled and said ‘yes’! The whole process turned out to be much easier than I thought and the pay off of these safe AND yummy cinnamon rolls was so worth it!

And this is coming from a die-hard chocolate fan who takes no shame in turning her nose up at sweets that dare not contain chocolate, lol! Yes, Vegan AND Gluten Free!

Ingredients

Dough

  • 1 cup warm milk of choice (we use coconut milk)
  • 1 ½ tsp quick-rise yeast
  • 2 ½ cups King Arthur Gluten Free Measure for Measure Flour
  • ½ cup sugar
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 2-4 Tbsp liquid coconut oil

Filling

  • ¼ cup liquid coconut oil
  • 1 Tbsp cinnamon
  • cup packed brown sugar

Icing (Optional)

  • 1 cup sifted powdered sugar
  • ½ tsp vanilla extract
  • 1-1 ½ Tbsp water

Instructions

  • Gently mix yeast with warm milk and a pinch of sugar and set aside to proof.
  • In a large mixing bowl, mix flour, sugar, baking powder, and salt until well combined.
  • Add warm milk mixture and 2 Tbsp of coconut oil to bowl and stir until dough comes together. Add additional coconut oil, one tablespoon at a time, if needed.
  • Place dough on floured work surface and roll out to approximately 16"x20".
  • Combine coconut oil, cinnamon, and brown sugar to create filling mixture. Spread filling over rolled out dough.
  • Roll dough gently from long side and cut off uneven ends. Cut each roll to be about 1 ½"-2" wide.
  • Place rolls onto greased baking sheet and cover with kitchen towel. Preheat oven to 400°F and place rolls in warm place to rise.
  • Once oven is preheated, remove towel from rolls and bake 20 minutes until browned.

Icing (Optional)

  • Whisk together powdered sugar and vanilla. Slowly add water until desired consistency is reached.

Assembly

  • Allow cinnamon rolls to cool slightly before assembly. Place cinnamon rolls close together on wire rack on top of a baking sheet or foil to allow for easy clean up after icing.
  • Spoon icing into piping bag or zip-top bag with one corner cut off (not too big) to allow for piping.
  • Pipe icing in zig zag pattern over entire group of cinnamon rolls. Allow icing to set for a few moments before eating. Enjoy!
