Easter is just around the corner, and it’s time to start thinking about the perfect dessert to share with friends and family. If you’re looking for something delicious and festive, you can’t go wrong with a classic and gluten free spice cake — and, you can do even better by serving it up in cute mason jars!

A spice cake is a type of cake that’s made with spices like cinnamon, nutmeg, and allspice. It’s a warm, comforting dessert that’s perfect for the cooler weather of spring. And, with its festive flavor and rich, moist texture, it makes the perfect addition to your Easter celebration.

We made these gluten free spice cake jars last Easter and they disappeared pretty fast! Even those who normally raise an eyebrow at the sight of anything gluten free eagerly reached for one of these fun and tempting desserts.

Annnnnd, maybe the best part, for the baker behind creating these anyway (wink, wink), is that the spice cake is whipped up using the Namaste Spice Cake Mix. I am not affiliated in anyway with the Namaste company, just a happy customer who is so glad companies like them exist.

Namaste’s line of baking products are top 14 allergen free and so easy to make! I’ve posted many times about how for food-allergy families, making things homemade oftentimes offers so much more personalization, assurance, and even saves time in some instances over searching stores, websites, calling manufacturers, etc. for a safe option. Buuuut, I’m all about making life easier where it makes sense and this mix makes so much sense, lol.

With the time this cake mix saves me in the kitchen, assembling the cake jars is pretty simple — even with preparing the house for an Easter gathering and meal.

Homemade food means taking some control over your food allergies and creating safe food that’s even healthier for the whole family!

Assembling you gluten free spice cake jars

In addition to the ingredients for this dessert, you’ll also need about 8 10-12 oz mason jars clean and ready. I mixed up the cake batter according to the box directions and then baked it in a greased 9″x13″ baking pans (instead of the round cake pans). (Note: We do typically use slightly less oil than what the box calls for, but you may need to test to see what you prefer.)

Once the cakes are done baking allow them to cool for about 10 minutes in the pans. Then, turn over the cakes and remove the pan to allow them to cool completely on cooling racks.

While the cakes are cooling, I normally whip up a batch of our easy cream cheese frosting. Put your completed frosting into a gallon-size plastic bag and snip off a small corner to be able to pipe the frosting in the next step.

Once completely cooled, cut the cakes into approximately 1″ cubes. Reserve about 4 of the cubes to crumple on top of your finished jars. Place 2-4 cubes of cake into the bottom of a jar. Pipe a layer of frosting over the cake cubes. Add another layer of cake cube and then frosting until the jar is almost full. Your last/top layer should be frosting. Repeat until you run out of cake or jars!

Crumble the reserved 4 cake cubes to sprinkle on top of the last layers of frosting. You could also add any allergy safe sprinkles or other festive candy decorations safe for your allergies. We discovered the Tootsie Pop Easter Eggs are made in a nut-free facility (shown in photo below)! (Note: Please always confirm any suggested ingredients are safe for your family.)

Ingredients

Spice Cake

  • 1 box Namaste Spice Cake Mix
  • 1 ⅓ cups applesauce
  • ¾ cup water
  • cup coconut oil (we usually use slightly less, between 1/2 cup and 2/3 cup, or the cake comes out slightly oily)

Cream Cheese Frosting

Instructions

  • Preheat oven to 350ºF. Lightly grease 9"x13" baking pan with coconut oil.
  • Combine applesauce, water, and coconut oil and mix well.
  • Add spice cake mix and mix until well combined.
  • Bake for 30-36 minutes or until toothpick inserted in center comes out clean.
  • Take cake out of oven and allow to cool slightly before turning over onto a cooling rack to cool completely.

Assembly

  • Once cake is completely cool, cut into approximately 1" cubes. Reserve 4 cubes to make crumb topping.
  • Make cream cheese frosting and place into piping bag or zip-top bag to be able to easily pipe into jars.
  • Add 4-5 cubes of spice cake to jars create first layer. Top with a layer of cream cheese frosting. Repeat process and end with final layer of cream cheese frosting.
  • Crumble reserved cubes of cake and sprinkle on top of top layer of cream cheese frosting.
  • Enjoy and let this yummy dessert blow your mind!
