Cucumber Radish Salsa

This is fresh, unique, and nightshade free salsa is a welcome change from traditional salsa!

Whether you’re avoiding nightshades or just super curious, you’ll find it difficult to stop with just a few scoops of this delicious and healthy salsa!

A while back I was trying to avoid tomatoes, specifically, as they seemed to trigger some acid issues which were no fun (read more about my journey here). Not easy for someone who could eat marinara sauce right from the bowl with only a spoon!

After a while, I desperately missed salsa, or pico de gallo, on family taco nights and went on the hunt for ideas thinking there had to be a tomato free salsa — as crazy as that sounds since tomatoes are the #1 ingredient in most salsas.

I came across a number of recipes, but none that seemed to fit my exact dietary preferences, as well as the texture and taste I was missing so much. In usual form, I sat down to craft what I hoped would kick my tacos back into gear!

The cucumbers and radishes in this salsa may not be what you would typically expect in a salsa, but believe me, they are perfection in this recipe! They absorb and take on the flavor of this salsa perfectly, all while keeping the perfect amount of crunch.

Cucumber Radish Salsa Nutritional Boosts

  • Cucumbers: While I like cucumbers, I really sort of thought of them as a pretty plain vegetable made up of mostly water without too much else, except for maybe reducing some eye puffiness. Wow, was I wrong! Cucumbers not only help keep you hydrated, they can also aide in managing diabetes, pain, digestion, healthy and bright skin, and lowering some cancer risks! (1)
  • Radishes: These peppery little root vegetables are great for lowering your risk of diabetes, managing liver function, and are rich in antioxidants and minerals that reduce your risk for heart disease. (2)
  • Cilantro: I LOVE cilantro for it’s anti-inflammatory, anti-fungal, anti-bacterial, and abilities to help detox heavy metals from the body. (3) I am in the lucky group of those who who are not genetically inclined to think cilantro tastes like soap — check it out, it’s a real thing!
  • Lime: In addition to their high Vitamin C levels to help protect you against infection, limes also contain loads of antioxidants to prevent chronic illness and inflammation. (4)

Ingredients

  • 1 bunch radishes, diced small
  • 1 large cucumber, diced small
  • 6 green onions, thinly sliced
  • 1 serrano chile, seeds and white membranes removed and minced finely (optional)
  • 1/3-1/2 cup fresh cilantro
  • 4 Tbsp lime juice
  • salt, to taste

Instructions

  • In a medium-sized bowl, add radishes, cucumber, green onions, serrano chile (optional), and cilantro.
  • Add lime juice and salt to taste and mix.
  • Serve immediately or refrigerate.
