In a large bowl, combine cauliflower rice, hemp seeds, parsley, nutritional yeast, salt, pepper, coconut oil, lemon, and pepper. Toss well to mix and then spread evenly on large sheet pan.
Roast in oven for 10-15 minutes. Then, mix evenly on pan and return to oven for 5-15 minutes more.
Once rice becomes brown and crispy (watch closely to prevent burning) remove promptly from oven and serve while warm.
