These cookies are hailed as "the best ever" by my family and are ideal for those with peanut or tree nut allergies, as the macadamia nuts we use are free from cross-contact with peanuts and other nuts!

Ingredients

  • 1 ½ cups unsalted butter, softened
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • cup applesauce (We use 2 pouches of this or 2 eggs!)
  • 2 tsp vanilla extract
  • 2 ½ cups gluten free all purpose flour (We've only tried this recipe using King Arthur Measure for Measure Gluten Free Flour.) (We've only tried this recipe using King Arthur Measure for Measure Gluten Free Flour.)
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup chopped macadamia nuts (We only use Hamakua macadamia nuts as they don't process any other nuts as of 1/2024.)
  • 1 cup chocolate chips (We use these chocolate chips. White Chocolate Chips would be great too!)

Instructions

  • Preheat oven to 375℉.
  • Mix together gluten free flour, baking soda, and salt.
  • In a separate bowl, cream together softened butter, brown sugar, and granulated sugar. Add in the vanilla and applesauce until well combined.
  • Slowly combine the butter and flour mixtures and then add the chopped macadamia nuts and chocolate chips.
  • Use large cookie scooper to scoop cookies onto parchment lined baking sheet. Bake for 15-18 minutes or until browned.
  • Move to a wire cooling rack to cool. Enjoy!
